Plantains in Palm Oil

Plantains are relatives of the banana. They are shaped a bit differently on the outside, are colored a bit differently on the inside, and they stand up to frying better. On the left you see a green (unripe) plantain, a ripe plantain, and two bananas for comparison.

 


Palm oil is used extensively in West African cooking, and it goes particularly well with plantains. Slice up the plantains and fry over medium heat in the oil. They take on a beautiful amber-orange appearance. They go well with cowpeas.
